
Sencha Tea is unique. In Japan, after the harvest, the leaves are steamed for a few seconds to prevent oxidisation.
On this side of the world (Spain), Verdejo grapes are generally picked at night, because like Sencha tea, they also can’t be allowed to oxidise, not if you want to make good wine with them. At dawn, when the work in the field is done, it’s essential to replenish energy, get warm, and prepare for a well-deserved rest.
A Sencha Green Tea infusion, with almost no caffeine, with raisins made from the previous year’s grapes, is the most perfect and comforting way to drift off to sleep.

Tasting Notes

Dry Leaves
Bright, flat, green leaves predominate, with yellow petals and whole dried grapes. A striking intense aroma of grape, sweet in the middle and greens in the finish.
Tea Liquor
Bright yellow colour. Sweet grape scent. Vegetable flavour with the sweetness of the dried grapes in the finish.
Wet leaves
Open leaves, green and bright among raisins and yellow flowers. Aroma of boiled vegetables, finishing with sweet notes from the grapes.
Body
Creamy, complex, rounded.

Sencha Green Tea
One of the most excellent Japanese teas, it has irregular sized flat leaves with an intense green colour. Its taste differs depends on where its produced. The most flavourful is the first harvest, that’s produced from the south of Japan to the north as the spring advances. It contains polyphenols, and antioxidant compounds.
Dried Grapes
Contain many of the nutrients of the fresh grape but concentrated, for example calcium, potassium, iron, magnesium and flavonoids with antioxidant and anti-inflammatory properties.
Sunflower Petals
A bright yellow colour, constituting a mild calming agent and are used to treat physical and mental fatigue, and stress. The sunflower is the magic flower as it moves constantly to face the sun and absorb its positive energy.
